Pierre Henry's Ceviche Recipe

  • 1 Lb. chopped fresh fish (Red Snapper, Ahi/Yellowfin Tuna, Dorado, or Shrimp or all of them!)

  • 3 limes juiced

  • ½ cup thinly sliced red onions

  • 1 chopped tomato

  • ½ cup chopped cilantro

  • 1 chopped jalapeno pepper

  • 1 garlic clove pressed

  • Salt to taste!

Mix fish, lime juice & onions together.   Refrigerate for 24hrs.
Drain lime juice and mix in all other ingredients.   Chill & serve.

Use tortilla chips to scoop!...
